The UNLV digital library has just released a new online exhibit called "Menus: The Art of Dining
Part of the exhibit includes a collection of menus from the rich history of Las Vegas restaurants.
Curators of the exhibit say the images will provide insight into some of Las Vegas' culinary history
, and are also evidence of evolving food tastes in our ever-changing city.
So what is and was that evolution like? We talk with a former chef, a UNLV restaurant expert and the collection's archivist about the exhibit and how dining has changed in Las Vegas over the past few decades.
