The UNLV digital library has just released a new online exhibit called "Menus: The Art of Dining." Part of the exhibit includes a collection of menus from the rich history of Las Vegas restaurants. Curators of the exhibit say the images will provide insight into some of Las Vegas' culinary history, and are also evidence of evolving food tastes in our ever-changing city.

So what is and was that evolution like? We talk with a former chef, a UNLV restaurant expert and the collection's archivist about the exhibit and how dining has changed in Las Vegas over the past few decades.
